2 cups cucumber and/or zucchini, diced
1 cup tomatoes, seeded and diced
¼ cup sweet onion, chopped
2 cups couscous or rice, cooked
2 tsp dried or fresh dill weed, chopped
½ cup Italian salad dressing, low-fat*
*or make your own dressing using:
3 tbsp vinegar
¼ cup oil
½ tsp salt
½ tsp sugar
1 tbsp dried Italian seasoning
Toss together cucumbers, tomatoes, onions, couscous (or rice), dill and salad dressing.
Chill for one hour. Serve.
