Healthy Green Treats for St. Patrick’s Day

St. Patrick’s Day is the perfect time to introduce delicious green foods into your child’s diet. Help them get excited about veggies by getting excited about the lucky holiday!

Spinach – Lucky Pot of Gold
Spinach is high in fiber, vitamins and minerals which can lead to strong bones, improved brain function and improved immune function.

Add spinach to a homemade macaroni and cheese that uses low fat milk and cheese. If they ask why “green stuff” is in their mac and cheese, you can say leprechauns added it for luck.

Kale – Clover Chips
Kale is also high in fiber and vitamins, and provides more calcium per serving than a glass of milk.

Kale chips are an easy and healthy snack to make. Cut up the kale into small pieces then simply spray with olive oil and add a seasoning, such as sea salt or garlic. Bake at 350 degrees for 10-15 minutes until they are crunchy. Tell your children they are Clover or Shamrock Chips, the perfect snack for leprechauns.

Avocados – Irish Guacamole
Avocados are considered a super food and full of healthy fats and fiber, both of which can improve heart health. 

Add more vegetables to your guacamole. Display chopped peppers and onions alongside the guacamole so it creates an Irish flag. After telling your kids about Ireland and St. Patrick’s day, let them enjoy mixing all the ingredients up together. For even more veggies, dip carrots and celery into the guacamole instead of chips.
