Recipe of the Week: Slow Cooker Rustic Italian Chicken

• This recipe was submitted by a patient who has been very successful with their program!

Prep Time: 40 min
Total Time: 6 hr 40 min
Makes: 6 servings

Ingredients:

12 boneless skinless chicken breast (about 2 pounds)
2 large carrots, cut into 1/2-inch slices
1 medium red bell pepper, chopped (1cup)
1 medium onion chopped
1 cup sliced fresh mushrooms (3oz)
3 glove garlic, finely chopped
1 tablespoon Italian seasoning
1/2 teaspoon salt
1/2 teaspoon pepper
1 can (28 oz) crushed tomatoes, undrained
Shredded 2% Parmesan cheese, if desired

Directions:
Spray 3 1/2 to 4-quart slow cooker with cooking spray. Place chicken in slow cooker. Top with remaining ingredients except cheese.
Cover, cook on Low heat setting 6 to 8 hours.
Serve like a stew. Garnish with cheese.

Eat it like a chicken stew. Serve with salad.
