It’s a hot summer day, you hear the jingle, and once again the ice cream truck strolling through your neighborhood. Your kids are anxious to scour the couch for spare change or grab the nearest dollar and head for the front door to chase down their favorite frozen treat. While this makes for great childhood memories, the high amount of sugar, caloric and carbohydrate intake from these treats can be costly to their health. To cut back on the amount of ice cream truck visits and still give your kids a tasty frozen treat, try this easy to make healthy popsicle recipe!
Nutritional information: 29 calories, 1 gram of sugar, 8 carbohydrates
Utensils you will need:
- A food processor or blender
- Ten 3-ounce freezer-pop molds
- Popsicle sticks
- 3 ¾ chopped seedless watermelon
- 2 tablespoons lime juice
- 1-2 tablespoons sugar
- 1 cup fresh blueberries
- Blend watermelon, lime juice and sugar in a blender or food processor until smooth.
- Place blueberries in individual freezer-pop molds, then pour watermelon mix over.
- Insert sticks and freeze for six hours (or until firm).
- Remove from freezer and run warm water over the molds to make the pops easier to remove.
